Slight Change on Course 1. No more Cauliflower. Sunchokes from RI, take the place of the Cauliflower espuma. They are at the top of their season and as sweet and earthy as they will ever be. This is one of my favorite winter vegetables and can't be paired with anything better than Truffle.

    Good choice; sunchokes (assuming these are artichokes) have such lovely color on a plate, while cauliflower just sits there waiting for sauce.
